The culinary specialist makes a ton of Kurban soup on May 24

Undoubtedly, the most important Bulgarian culinary discipline is the thin slicing of dry meze. The master gastronomist Uti Bachvarov is adamant about this, and that is why he will personally lead the first competition in our country for cutting sheep sujuk – a first-class delicacy prepared according to a traditional recipe.

The race will be held on May 24 – the first day of the Sheep Breeders’ Assembly near the Petropavlovsk Monastery from 1:00 p.m. to 2:00 p.m., and the registration for participation will be on-site immediately before that, the organizers announced.

Anyone, regardless of gender and age, who believes in their skills can participate in the competition. Boards and the obligatory sharp knives will be provided by Uti, who will personally monitor the quality fine cutting and award prizes to the best. Sheep sujuk contain all the taste and aroma of Bulgarian cuisine, and the finer it is cut, the better its flavors are felt, the culinary specialist is emphatic.

On the first day of the Assembly, from 11:00 a.m., the gourmet TV host will also lead the traditional lamb deboning competition. Uti will count the speed and precision of the participants, who must use their own knife in the cutting.

Immediately afterwards, the fragile crumbs will be put into a large holiday offering. To enhance the broth in the gigantic copper cauldron, along with the meat of 5-6 lambs, will be added roasted chevremet bones, over 100 sprigs of fresh parsley and as many chives, 100 kg each of onions and carrots, half a kilo of pepper and plenty amount of garlic. The one-ton festive Kurban will be distributed free of charge for health at precisely 2:00 p.m.

The meeting of sheep breeders this year will also present the achievements in the industry and the rich folk culture, traditions and folklore. From May 24 to 26, near the Peter and Paul Monastery, there will be an exhibition of various types of animals (sheep, goats, draft horses, donkeys, dogs, etc.), agricultural machinery, equipment, fodder, specialized literature and medicines for animal husbandry, a bio market, an exhibition of sheep and goat milk and meat products, various farm competitions, demonstrations of dairy food production using authentic and modern technologies.

The twelfth edition of the event will offer a lot of folklore, craft exhibition, culinary demonstrations, ethnic attractions and re-enactments, folk festivities, evening concerts, nestinars, horoteks and many more emotions, fun and experiences.

The National Assembly of Sheep Breeders in Bulgaria has been held annually near the Patropavlovsky Monastery, Veliko Tarnovo region, since 2011. The forum is organized by the National Sheep and Goat Breeding Association (NOKA) and the “Heritage in the Future” Foundation, with the assistance of the Ministry of Agriculture and Food of the Republic of Bulgaria and the support of the municipalities of Veliko Tarnovo, Lyaskovets and Gorna Oryahovitsa.
